Unscrupulous producers can sell oil as "extra virgin" as long as they meets acidity standards and satisfies chemical analysis standards without informing consumers that some of the oil is chemically rectified or that it has been blended. Frauds include blending olive oil with nut or seed oils, as well as blending rectified oil with extra virgin olive oil.

Some EVOO sold in USA is respecting the U.S. standard which don't correspond to International Olive Oil standards. It is relevant that such US rules were issued in 1948, under Truman Presidency in USA and that some important US organizations are trying to change. At this moment many US consumers are thinking to adopt an healthy program purchasing an EVOO but they don't know that they are eating fake oils which surely don't cause any health problem but at the same time they are not combating their free radicals.

Obviously, such oil will not have the health benefits of a true extra virgin olive oil!

How I can recognize true EVOO ?
